Sauerkraut is the most well-known fermented food and has been around for at least 1,000 years. Before refrigeration, fermented foods were a way to get nutrients throughout the winter and were known by sailors to prevent scurvy. Our classic kraut recipe is similar to what has been made over the millennia. Its sour tang can enhance any meal and provides billions of beneficial bacteria in every bite.
Shelf life:
An unopened jar of kraut is shelf-stable and can be kept in your pantry for up to a year. Once opened, keep it refrigerated and consume within one year of opening. When opening your jar for the first time, open slowly over the sink in case any of the brine leaks out as the pressure is released.
